What it
means
Up to which stage is the “past” of Unigrana cheeses
traceable? Up to the seeds’ origin, and then, like a chain,
from the forages to the food for the animals, and finally to the
milk.
In fact, the Quality process starts upstream from farms where crop
rotation is made so as to let land naturally regenerate. The seeds
which will become forages for animals are therefore supplied by
farmers who can guarantee the seeds’ origin and source; the
forages are then divided into lots and identified by a number so
as specific origin crop and harvest conditions can be traced back.
All the process stages are duly recorded and kept by breeders in
specific files; the breeders too shall comply with all the procedures
established for the food and hygienic handling of the milk cattle:
milking, milk gathering and pooling, waste waters management.
For any of these steps, the Quality System clearly settles rules,
regulations, technical and organisation principles, and appoints
also those – from the Milk Master to the Company Veterinary – who
must check and verify that anyone at any time strictly adheres
to these rules. |

Parmigiano Reggiano – of a quality policy aiming to excellence.
By means of the Controlled Chain Project, Unigrana - together with
its suppliers – is building up relationships based on a Quality
Control System which can be shared by any leading part in any single
area.
